Favorite Layer Bars
One of my fondest memories from childhood is of my Mom baking. She started baking in September or October making fruitcake which steeped in alcohol until Christmas. Then in December began all the cookies and squares. We'd make trays up for special friends and family.
I carry on that tradition now. I baked all weekend and tonight. I still have a few things to make. My oldest son, Ryan, sent me a text this morning. He works at Johns Hopkins Hospital and his department is having a pot luck holiday party on Friday and they've asked him to bring Nanaimo Bars (I made him a tray last year and they didn't last long), he wants me to make 2 trays this year.
I remember my Mom making Favorite Layer Bars, here is her recipe.
1 1/2 c. graham cracker crumbs
1/4 c. sugar
1/4 c. butter, melted
Mix together and press into the bottom of a 9" x 13" baking pan. Bake at 325 degrees for 10 minutes.
8 oz cream cheese, softened
1/2 c. sugar
Combine and mix well. Spread over crust.
Sprinkle 3/4 c. coconut, 3/4 c. chopped nuts (I used a mixture of walnuts and pecans), half a bag of chocolate chips (6 ounces) over the top of the cream cheese mixture and press into the surface. Bake at 350 degrees for 25 to 30 minutes or until lightly browned. Cool, cut into bars and enjoy.
